Ingredients:

  • 225 gm all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 3/4 cup (180 ml) unsalted butter, at room temperature
  • 2 cups (450 grams) sugar
  • 3 large eggs, beaten
  • 2 ripe bananas, mashed (about 1 cup or 250 grams)
  • 1 tablespoon vanilla extract
  • 1/4 cup (60 ml) milk

Cooking Instructions:

Preheat the oven to 350 degrees F (175 degrees C).

Grease a 9×5 inch loaf pan with butter.

Mix together the flour, baking powder, baking soda, salt and cinnamon in a medium bowl.

In a separate bowl, beat together the butter and sugar until light and fluffy.

Beat in the eggs one at a time, then mix in the bananas, vanilla extract and milk.

Stir in enough of the dry ingredients to make a smooth batter.

Pour into the prepared pan and bake for about 50 minutes, or until a toothpick inserted into the center comes out clean.

Cool on a wire rack before slicing.
